It wasn’t just the deliciousness of our eggs that was recognized this time. The judges also recognized our chicken health management—which draws on the expertise of veterinarians—our feed formulation, our circular agriculture utilizing chicken manure, our utilization of laying hens, and our “sixth-sector industrialization” efforts to expand the appeal of eggs into desserts and other dishes. This result reflects recognition of our entire “egg production” process, which we have been dedicated to for many years.

■ Why This Award Is Special
— A Food Award Where “Taste Alone Isn’t Enough” —
Unlike typical food contests, the ICC Summit Food & Drink Awards go beyond a mere evaluation of taste.
Entries are comprehensively judged based on the following five criteria:
Deliciousness (overall experiential value, including taste, people, conversation, and the environment)
Sustainability (environmental, social, and economic)
Artisan (craftsmanship, technique, philosophy, and expertise)
Branding (design and concept)
Resonance with the Vision (Story)
This is a food award that evaluates products not only for their taste but also for their underlying philosophy and social impact; winning this award is a testament to our product being recognized not just for its flavor, but also for the design philosophy and purpose behind it.

■How much value can be created from a single egg and a single chicken?
The three dishes served this time were “Onsen Tamago Kake Gohan” (rice topped with soft-boiled eggs) made with free-range Nagoya Cochin and rice eggs, “Tamagoippai Pudding” (egg-rich pudding), and “Old Hen Broth,” which highlights the umami of older hens.
For the “Onsen Tamago Kake Gohan,” we used locally grown rice cultivated with organic fertilizer made from our own fermented chicken manure. (Rice provided by Agri Service Ltd.)
We return resources derived from the chickens to the rice paddies, and the rice grown there is then fed back into the local community and the chickens.
Additionally, we worked with Chef Kazuya Mizuno of “The Origin Plate” (a native of Tokoname City) to create a broth made exclusively from salt sourced from the Chita Peninsula, using the meat from our laying hens that had finished their egg-laying cycle.

■Because we’re a father-son team of veterinarians, we approach eggs from the perspective of chicken health
Daily Farm has been raising chickens in Tokoname City, Aichi Prefecture, for three generations. President and CEO Akihiro Ichida and Chairman Masumi Ichida are both veterinarians.
Akihiro Ichida worked as a clinical veterinarian before joining the family business in 2015.
He shifted from the work of “treating sick animals” to the work of “raising healthy chickens.”
By paying close attention to the chickens’ health, feed, water, air, rearing environment, and hygiene management—and guided by the belief that “only healthy chickens lay delicious eggs”—they continue to produce eggs.
■Comment from Akihiro Ichida, President and CEO
In 2015, we opened “Coco Terrace,” a specialty shop for egg-based sweets.
Since then, we have expanded to include the farm-to-table restaurant “Recipe-o” and the bakery “Niwa no Pan,” and the facility has grown into “Coco Terrace Hill,” which now attracts approximately 180,000 visitors annually.
We do not view “egg production” as merely the act of laying eggs.
Raising healthy chickens. Pursuing flavor and nutrition. Returning chicken manure to local agriculture. Creating value in the lives of our laying hens. And conveying the appeal of all this through our products and experiences.
All of this constitutes Daily Farm’s “egg production.”
Our management philosophy is “Bringing Happiness to People Through Eggs.”
Taking this championship victory as a new beginning, we will continue our efforts from Tokoname City, Aichi Prefecture, aiming to build an egg brand we can proudly present to the world.
