hotomugi’s crepes aren’t made with rice flour just for that “chewy” texture. Our goal was to achieve a toasty aroma and lightness. By using coarsely ground rice flour, the aroma of rice rises gently as it bakes. The edges are slightly crispy, while the center is thin and supple.Lighter than crepes made with wheat flour alone, yet with a melt-in-your-mouth texture that’s smoother than those made with rice flour alone. It strikes the perfect balance between rice flour and wheat flour.These are special crepes that you can enjoy just like baked goods. They have a lighter aftertaste than crepes made with only wheat flour, yet melt in your mouth better than those made with only rice flour, and break cleanly with a crisp snap—we aimed to create a crepe that’s gentle on both adults and children.
