The themes are “heat sources,” “temperature ranges,” and “aromas.”
From the high temperatures of charcoal fire—approximately 1,000 degrees—to the cold temperatures of liquid nitrogen at minus 196 degrees, the restaurant expresses these temperature changes within a single course, offering a form of counter gastronomy that reinterprets ingredients from the Tokai and Aichi regions in a new context.At the counter seats surrounding the open kitchen, guests can experience the live atmosphere of the dishes being prepared while feeling the aroma and heat rising from the charcoal bed up close.
We offer a menu designed to stimulate all five senses, featuring performances such as the preparation and serving of Nagoya Cochin right before your eyes, as well as a tasting comparison of Genji Wagyu prepared using different temperature ranges and cooking methods.
We reinterpret the culinary culture and memories of the Tokai region through cooking techniques, temperature, aroma, and dialogue with our chefs, delivering a dining experience unique to this venue.

On the hotel’s first floor, we have established concept rooms in collaboration with Garage Co., Ltd.—the company behind the green and interior design shops “garage,” “Rust,” and “noni,” based in Toyohashi City, Aichi Prefecture—to create special guest spaces themed around water and greenery.
Within “NAKAGAWA CANAL DOORS,” an iconic facility of the Nakagawa Canal Revitalization Project, we have created a special guest space centered on the themes of waterfront and greenery.
As guests step from the entrance into the guest room area, they are greeted by dynamic plant arrangements and natural materials, with the vitality and light emanating from the plants lending a rich character to the space.
The guest rooms consist of a total of six rooms—two each reflecting the distinct worlds of the three brands: garage, Rust, and noni.
These spaces allow guests to experience the value of “living with plants” through the vegetation and interior design.
Alongside the serene scenery of the Nakagawa Canal, you can enjoy a time to quietly unwind both mind and body.
03|Art Connects People and the Community

Works by artist Tomoko Nakasone are displayed throughout Setre Canal Nagoya.
Taking the traditional Finnish decoration “Himmeli” as her starting point, she creates works using natural materials such as rye she has grown herself, carefully weaving together the cycles of nature, human activities, and the relationship with the space.
Placed in the entrance, at the restaurant entrance, and along the staircase leading to the lounge, these works interact with the changing light and waterfront views throughout the day to create a scene unique to this location.
This deeply resonates with Setre’s philosophy of coexistence with local culture and nature, offering visitors new insights.

At Setre Canal Nagoya, we have incorporated furniture from “Hida Sangyo,” a furniture manufacturer headquartered in Takayama City, Gifu Prefecture, into the lounges and some of the guest rooms throughout the facility.
The tranquil Nakagawa Canal stretches out beyond the windows. We have imbued this waterfront—which once supported the city’s development as a route for transporting timber—with a single aspiration.
That is, the items we select and use in this place will contribute to the future of our rich forests.
Founded in 1920, Hida Sangyo is a woodworking furniture manufacturer that has been working with wood for over 100 years. While carrying on the craftsmanship of Hida’s master artisans, the company views wood not merely as a material, but as a living entity with its own unique character, and creates furniture based on this philosophy.
One of Hida Sangyo’s signature techniques is “bentwood.” This technique involves heating wood with steam to shape it into beautiful curves without damaging the fibers, achieving both high strength and comfortable seating.
Furthermore, we have continued to practice manufacturing that makes full use of resources without waste—for example, by utilizing beech wood, which was once shunned as a furniture material, and by embracing the knots and grain patterns as unique characteristics created by nature.
“If a tree has taken 100 years to grow, let’s turn it into furniture that will be cherished for another 100 years.”
