The grand opening is scheduled for June 18, 2026.
Prior to the grand opening, CHUSTO will be open from May 30 to June 17 as a pre-opening period. (*Only dinner service will be available during the pre-opening period.

The name of the restaurant is CHUSTO.
The name "Chusto" is a combination of the words "meat" (Chuleton) and "just right" (Justo).
We named our restaurant "CHUSTO", which is a combination of two Spanish words.
We have a lineup of wines grown in the lands of Spain, and simply prepare ingredients that you can see the faces of the Japanese producers.
The restaurant's specialty is the L-bone steak, which is prepared over charcoal to bring out the best flavor.
We value straightforward taste and depth rather than showiness.
Akagyu beef from Kumamoto. Shorthorn beef and delicious fish from Iwate.
And carefully grown pesticide-free vegetables from Saitama and Chiba.
Japanese ingredients add a touch of flair to traditional Spanish dishes and rice dishes.

Chuleton: Spanish Charcoal Grilled L-Bone Steak
Chuleton is a Spanish charcoal-grilled L-bone steak. It is especially famous as a specialty of the Basque Country, a gastronomic city in northern Spain, where delicious steaks are served in bars. Spaniards are always feasting on turetons, and Spanish bars are lively, smiling, and bustling with activity. Spanish bars where you can enjoy delicious charbroiled L-bone steaks, quality ingredients, and wine. We wish there was a restaurant like this in Japan, just like in Spain, and we will embody it at "CHUSTO"!
In preparation for the opening of the restaurant, we searched day and night for the best beef for the charcoal-grilled L-bone steak and the best way to grill it. We visited ranches and butcher stores to deepen our learning through repeated trial production and tasting, and to listen to the real voices of the producers and learn about the actual situation. The red beef from Harada Chikusan in Kumamoto and shorthorn beef from Tamura Farm in Iwate, which we met there, are delivered to the store. We hope you will enjoy the char-grilled L-bone steak of chuletón española, which is the pride of the restaurant!

Starting with our famous L-bone steak, we prepare charcoal-grilled dishes using high quality ingredients shipped directly from the producer. For example, Azumino Jidori chicken from Nagano, Dorobuta bone-in roast from Hokkaido, Nametagarei (flatfish) nerve-finned by fishermen in Kamaishi, Iwate, and pesticide-free vegetables from Saitama and Chiba. There are also three original sauces to complement the charcoal-grilled dishes: Alioli: garlic and olive oil / Mojo Belle: mint and parsley / Mojo Picon: cumin and paprika.

We have a wide selection of wines that we feel are good to drink now, and you can enjoy them by the glass. We have a little more northern Spanish wines due to our passion for our specialty, the char-grilled L-bone steak that represents the Basque Country in northern Spain, as well as wines from small wineries and wineries that we visited during our training in Spain. As a restaurant with a young team, the new restaurant will be led by two young people. The manager & sommelier will be Shusuke Sawai, who studied at "Sal Amor" in Daikanyama and "Bar Portillo" in Nakameguro, and the head chef will be Ryoga Nakagami, who trained at "La Panza" in Ginza and "Bar Portillo" in Nakameguro.
