Castella biscuits combine the fluffy, moist texture of sponge cake with the light, crispy texture and aroma of biscuits. These contradictory charms are combined in a single confectionery.
The first bite is gently sweet, and as you bite into the biscuit, you can feel the texture change and taste the richness of the flavor.
Background of development
Moist dough and crispy biscuit. In order to achieve the coexistence of these two textures, which had been considered difficult to achieve, we conducted numerous prototypes and made detailed adjustments to baking temperatures and formulas.
The manufacturing method that maintains the moisture content of the sponge cake while not compromising the lightness of the cookie has achieved an exquisite balance that does not lean toward either one or the other.
