Osaketo, a restaurant serving Japanese sake and Japanese food in Tokyo, will hold a special event on Saturday, October 18, 2025 at "Japanese Food Days Osaketo Mitsukoshimae" welcoming "LINNE," an up-and-coming craft saké brewer.

We will welcome Mr. Shoya Imai, brewer and representative of LINNE, and offer a diverse lineup, including its signature brand "800 (YAO)".
In addition, the chef has tasted the sake and prepared a unique kaiseki meal for this special occasion. Please enjoy the one-of-a-kind pairing experience of autumn flavors and creative SAKE.

Osaketo collaborates with sake breweries and wineries from all over Japan to regularly hold "Osaketo Kai" where you can taste the charm of sake through all five senses.
This time, we welcome Mr. Shoya Imai, representative of craft saké brewery "LINNE", to present a creative lineup and pairing with a special kaiseki meal only available on this occasion.

We are pleased to welcome Mr. Shoya Imai, brewer and representative of LINNE.
Mr. Imai founded his own sake brewery as the first toji in Tokyo and Paris, and after working in France and the U.S., he founded LINNE in 2024.
He will speak directly about his thoughts on sake, including the background of his creative sake brewing and the perspectives he has cultivated on the world stage.

Three sake from LINNE will be served: "800 Soba," "800 Barley Barrel Aged," and "800 Rice," each with its own distinctive character.
In addition, "FONIA TERRA", "FONIA tea ORIENTAL", "ORBIA SOL", and the latest "SummerFall" from "WAKAZE", in which Mr. Imai was involved as the first toji, will be served.
Please enjoy this special lineup, some of which can be enjoyed warmed, along with the dishes.

The chef actually tasted the sake and composed the menu to match the creative flavors of the sake.
The chef will prepare a special kaiseki course that will surprise you with each dish, incorporating seasonal delicacies such as fall salmon, fall swordfish, and figs, and using ideas outside the boundaries of Japanese cuisine.
