Menya Gyaos (located in Ogawa-machi, Hiki-gun, Saitama Prefecture), a salted soba specialty restaurant, will begin selling a summer-only menu, "Cold Salted Soba with Dashi Ice," from mid-June 2025 (sales period: mid-June to the end of September).

Cold Salted Soba with Dashi Ice

Dashi ice frozen with our famous sea bream soup stock is floated on top of the chilled soup to create a summery dish that is cool to the last drop and aromatic to the palate.

The noodles are not the usual thin noodles, but "thick noodles with whole wheat flour" specially developed for chilled soup.

The noodles are characterized by their smoothness and smoothness, and are an excellent match with the cold soup.

The soup is layered with the umami of six kinds of seafood, including sea bream, and finished with a salt sauce made from Hokkaido scallops and a blend of bonito and muro-aji mackerel oil, for a well-balanced aroma and umami flavor.

The deep flavor is achieved even when chilled.

As a restaurant specializing in salt soba, we wanted to combine the true taste of dashi with the coolness of the dish. The frozen tai-dashi broth is cold to the last drop, but still has a deep flavor. This summer, we hope you will be filled with the coolness of "dashi ice.
