Uji Matcha Dorayaki
The Uji Matcha Dorayaki sandwiches bittersweet Uji green tea cream with Hokkaido mascarpone cheese and sweet red bean paste made from Hokkaido azuki beans in a moist crust. Three types of flour are used to make the crust moist and tender.
Uji Matcha cream sandwich
The "Uji Matcha Cream Sandwich" sandwiches cream with white chocolate and Hokkaido azuki beans in a matcha sable made with domestic rice flour. To maintain the delicate texture of the matcha sablet, we made many prototypes to find the right balance between the blend, the degree of baking, and the amount of cream.

Comments from Hiroshi Sasaki, owner of Gion Sasaki
Uji green tea dorayaki
The dorayaki, which has been familiar since ancient times, is gorgeously made with vivid colors, a sweetness that does not spoil the good flavor of matcha green tea, and a hearty texture. The dough is made to be both fluffy and moist, and the smooth and gentle cream is combined with the dough to give it a pleasant texture. Please enjoy the luxury of feeling the moderate amount of red bean paste there.
Uji green tea cream sandwich
The crispy yet moist matcha sublet takes advantage of the characteristics of rice flour and matcha green tea. The richness and firmness of the cream sandwiches have been adjusted to match the light texture of the dough. The matcha aroma remains just right, making it a pastry that goes well with both coffee and tea and can be enjoyed by everyone. We hope you enjoy it with your guests and family.

History of Itohkyuemon
It started in the late Edo period (Tempo 3) when Tsuneemon Ito I and Takizo Ito were involved in the tea business in the village of Meimura, Tahara (present-day Uji-Tawaraminami). The tea business was then passed down from generation to generation through Ito Tsuneemon II and Kyuzaburo, Ito Tsuneemon III and Yoshimatsu, and Ito Takichi IV. In 1952, Kyuzo Ito V moved from Uji-Tawara to Uji, and opened a store selling Uji tea at Uji-Renge (present-day Heidoin Omotesando). In the same year, when he established the company, he took the name of Ito Tsuneemon, which had been passed down from generation to generation, and the first letter of "Hisa" in Ito Kyuzo's own name, and named the company "Itohkyuemon Co. In Uji-Tawara, where the company was founded, the Ito family continues to grow tea in the tea plantation that has been passed down from generation to generation.
