■Meeting the demand for year-end gifts and hometown tax payments
Amano has won the "Restaurant & Bar award" for two consecutive years at the Luxlife Magazine Awards 2023 and 2024, hosted by the British web magazine for the affluent. The "world-renowned taste" is available on our e-commerce site and has also been selected as one of Shiraoi-cho's hometown tax return gifts.
While the demand for tax returns and mail order has been increasing, it has been difficult to deliver 100% of the taste of Shiraoi Beef because it takes a long time to ship from Hokkaido.

Reducing Food Waste - Efforts to Address the SDGs
The opening of "Upopoi (symbolic space for coexistence of peoples)" (Shiraoi Town, opening in July 2020), a national facility to pass on Ainu culture to the next generation, which is an element of the SDGs (Sustainable Development Goals), and the growing trend in the food industry toward sustainability initiatives (*) have prompted us to implement SDGs initiatives as well. SDG Goal 12 targets "halve global per capita food waste at the retail and consumption levels by 2030, and reduce food losses in the production and supply chain, including post-harvest losses. In order to realize this target, we have come to the conclusion that in order to reduce the waste of rare Shiraoi beef, it is important to preserve the high quality flavor and freshness of the beef, and have decided to utilize the "freeze-to-freeze" system.
What is the liquid freezing machine "Frozen Sleep"?
This is a technology developed by Technican Corporation that freezes food even faster than conventional air-cooled quick-freezing. Slow freezing speeds damage food cells, which leads to loss of flavor when thawing, resulting in a loss of quality.
On the other hand, "frozen sleep" freezes food at an overwhelmingly fast speed at -30°C, resulting in very little damage to the food's cells and maintaining its high quality. Compared to conventional freezing, the amount of dripping is reduced to about 1/10.
