What is Godai-an Unpasteurized Sake?

GODAIAN's sake is made by carefully selecting ripe Kishu Nanko plums from our own farms and preparing them with glacial sugar, granulated sugar, etc. We use ripe Nanko plums to make our sake. The use of fully ripened Nanko plums produces a fragrant and mellow plum wine.

The blend with the time-honored, heavy old sake creates the aromatic, fruity, full-bodied, and mildly deep "Godai-an Genshu".


Recommendations for drinking

The best way to drink it is on the rocks, where you can enjoy its fruity aroma and rich flavor.

Pour half of the sake into a glass filled with ice, slowly pour in soda water, and stir gently to finish. Since soda water tends to lose its flavor when the temperature is high, we recommend pouring in the following order: ice, plum liqueur, soda water.

In cold winters, drink with hot water. Pour the hot water first and the sake later. Pouring afterward allows the steam to enhance the aroma and flavor.



What is Shoya Zenpachi?

Kishu Nanko plums harvested at our own farm are carefully soaked in French brandy blended in Japan. The result is a mild, full-bodied, mouth-watering plum wine with a fruity aroma characteristic of brandy. Stored unopened for the desired length of time, it will mature and enhance the mellow aroma, allowing you to enjoy a mellow and rich plum wine.

The product name "Zenpachi Shoya" is derived from Zenpachi X, the founder of the Azuma family.

Zenpachi spent 19 years completing the development of the Habegawa area (in Minabe-cho) by order of the Tanabe Clan of Kishu, and also devoted himself to the production of plums.

The present Azuma Farm was established by Zenichi, the second son of Zen'emon XI, and is now in its sixth generation.

Zenshichi, the first generation of the present Higashi family, was granted a surname belt by the Kishu Tokugawa family in Kyoho 8, and has served as a village headman for generations since then, which led to the adoption of "Shoya" in the product name.

What is Kishu Nanko-Ume?

Kishu Nanko-Ume is said to be one of the most expensive plums in Japan.

Wakayama Prefecture is the largest producer of ume in Japan, and the amount of ume harvested per area of ume cultivated is more than twice the national average. Wakayama Prefecture is located in the southern part of Japan and is mountainous and rather barren, but ume trees grow in soil with good drainage and is famous for its mild climate and long hours of sunshine with the Kuroshio Current flowing through the area.


Nanko-ume was born in Minabe-cho, located in the central part of Wakayama Prefecture, which is mostly gently hilly, in the 1950s. Kishu Nanko-Ume, a high-grade pickled plum that can be harvested in this Minabe-cho, is a superior variety characterized by its fruity, fragrant, thick pulp, rich in organic acids such as citric acid, and softness, because it is harvested after the fully ripe plum fruits have naturally fallen.

■ Azuma Noen begins producing ume wine with a special focus

In 2016, Azuma Noen acquired a production license and began in-house production out of a strong desire to make delicious ume wine that we can proudly deliver to our customers.

We are particularly particular about Nanko-ume as the raw material for our plum wine. Instead of the green plums commonly used, we choose fully ripened plums with a rich aroma, and we have been fascinated by their soft taste since the development stage. Because fully ripened plums are soft, they are carefully selected by hand and used for pickling.

Furthermore, we are very particular about the sugar used for pickling, and use glacial sugar and granulated sugar instead of any liquid sugar. This allows the extracts of the plums to be extracted slowly over a long period of time, resulting in a richly flavored plum wine.

Pickling is done in June during the plum season, and the plums are pulled up before winter. The plums are then matured in tanks for at least one and a half years to deepen the flavor. After about two years of pickling, we deliver our products to our customers with increased sweetness and flavor.
