This is a new type of pork shabu shabu shabu with a choice of three types of bonito-based soup stock, freshly shaved bonito and three types of sauce dissolved in the soup stock.
The "Dashi broth Shabu Shabu Shabu" is made from three types of bonito broth: (1) Golden broth made from whole bonito, (2) Thick collagen broth aged for a long time, and (3) Umami all-star broth made from bonito, kombu, shellfish, and shiitake mushrooms. You will first select one type of soup stock as the base soup stock.
In the soup stock of your choice, we will pour over a generous amount of Oigatsuo, a very thin 0.01 mm of the finest "Honkare-bushi from Ibusuki" bonito flakes, freshly shaved in the restaurant to give it a rich flavor. First, shabu-shabu the shoulder loin and enjoy the meat quality and sweetness of Kyotanba Kogen pork directly with natural sea salt.
Mix the soup stock with the sauce prepared in the buckwheat noodle bowl, such as white ponzu vinegar, grilled barley miso, walnut sesame seeds, etc., to taste the characteristics of each part of the pork, just like zaru soba.
