Itohkyuemon established in the late Edo period, and Gion Sasaki a Exceptional cuisine restaurant, will start selling Uji green tea dorayaki and Uji green tea cream sandwiches in collaboration on November 1 (Friday), 2024. The collaboration sweets, "Uji Maccha Dorayaki" and "Uji Matcha Cream Sandwich," developed in collaboration with Hiroshi Sasaki, will be on sale at Entre Marche, Souvenir Road, JR Kyoto Station from November 1, 2024.

"Gion Sasaki" is known as one of the most difficult restaurants in Kyoto to get a reservation, and "Itohkyuemon" has been pursuing the quality of Uji tea since Tempo 3. After three years of pursuing new matcha confections with Hiroshi Sasaki, owner of Gion Sasaki, the first collaboration sweet "Uji Matcha Butter Sandwich Takumigasane" was launched in April 2024, and the second collaboration sweet "Uji Matcha Fresh Dorayaki Takumigasane" was launched in May 2024, available online only. Due to their popularity, we have developed "Uji Matcha Dorayaki" and "Uji Matcha Cream Sandwich" as room temperature souvenirs, which will be available for pre-sale at JR Kyoto Station Souvenir Road and Entre Marche from November 1, 2024.
Uji matcha dorayaki
"Uji Matcha Dorayaki" sandwiches bittersweet Uji Matcha cream with Hokkaido mascarpone cheese and sweet red bean paste made from Hokkaido azuki beans between moist crusts. Three types of flour are used to make the moist crust.
"Uji Matcha Cream Sandwich" sandwiches cream with white chocolate and Hokkaido azuki beans in a matcha sable made with domestic rice flour. To maintain the delicate texture of the matcha sablet, we made many prototypes to find the right balance between the blend, the degree of baking, and the amount of cream.

Uji matcha dorayaki

History of Itohkyuemon
It was in the late Edo period (Tempo 3) that Tsuneemon Itoh I and Takizo Itoh were engaged in the tea business in Tahara-mura, Meimura (present-day Uji-Tawaraminami). The tea business was then passed down from generation to generation through Ito Tsuneemon II and Kyuzaburo, Ito Tsuneemon III and Yoshimatsu, and Ito Takichi IV. In 1952, Kyuzo Ito V moved from Uji-Tawara to Uji, and opened a store selling Uji tea at Uji-Renge (present-day Heidoin Omotesando). In the same year, when he established the company, he took the name of Ito Tsuneemon, which had been passed down from generation to generation, and the first letter of "Hisa" in Ito Kyuzo's own name, and named the company "Itohkyuemon Co. In Uji-Tawara, where the company was founded, the Ito family continues to grow tea in the tea plantation that has been passed down from generation to generation.
