■Project Background

Since its establishment, our restaurant has survived World War II and the Great Hanshin-Awaji Earthquake, but around February of this year, we were informed by our predecessor that we had a large amount of debt. At one point we considered closing the restaurant, but we were encouraged by the supportive words of many people, including regular customers, staff, neighborhood residents, and local merchants, and we decided to continue.


With no experience in running a restaurant, we were groping in the dark, doing what we could, and we realized how encouraging it was to have everyone's support, which led us to the choice of crowdfunding.

We launched this project with the hope of bringing a nostalgic taste to those who have spent time in Akashi, and also to let those who have never visited our restaurant know about our traditional taste.

The broth has a firm and gentle sweet characteristic using fluffy dried bonito flakes in our original "Hana-katsu" from the Uonotana shopping street, creating a taste that lingers.

It is a comforting soba that everyone from children to the elderly can enjoy with peace of mind.
