The restaurant is produced by "hanninmae," a food consulting group. Located in the eastern part of Hokkaido, Nakashibetsu Town is cool throughout the year and is a large-scale dairy farming area, mainly grassland dairy farming based on the principles of cold-weather agriculture. Taking advantage of this blessed local resource, we use only fresh and delicious raw milk from cows that have been raised healthy and fed with plenty of high-quality roughage (grass). The five dairy farms with different characteristics use only carefully selected raw milk from each farm, which is pasteurized and processed directly in the company's own factory.
