Hirose Sake Works (located in Tenno-cho, Hekinan City, Aichi Prefecture; Representative: Yohei Hirose), a sake brewery without a brewery or license, has reached its goal for the project "eight" on the crowdfunding site "CAMPFIRE" in the first six days. The project has reached its target amount in the first six days of its launch.

This project will continue until August 31, 2024 (Saturday) with the next goal to create a new "eight" with a new brewer to further impress customers with a taste unlike any other in the world.

What is "eight" Sake?

Hirose Sake Works aims to create new value through sake, and as a "brewery without a brewery," produces original sake in cooperation with various sake breweries.

We have created "eight" sake based on the idea of "creating sake that makes people happy through its taste.

As a first step, we have created an assemblage of sake from Aichi Prefecture's Toshun Sake Brewery and Gifu Prefecture's Mishirozakura. The result is a harmony of the two breweries' individualities, creating a taste that could not be achieved by sake brewing. We also combined fire-aged kijo sake and activated muddy sake, aiming for fermentation in the bottle in a semi-raw state.

Background of the launch of the "eight" project

The "eight" project was launched largely due to our experience in running a sake bar. I realized that by arranging sake, sake can be made even more delicious. We want to bring the taste produced by such free thinking to more customers. We would like to incorporate our free ideas into our sake brewing plans and create sake with various approaches.

With the cooperation of various sake breweries across the country who share our passion, the "eight" brand was born, and we decided to conduct this crowdfunding campaign in order to bring "eight" brand sake from Nagoya to the rest of Japan, and in the future, to the world, and to build a new sake culture.

Taste that creates a strange and exciting experience

We will try to create sake with a different brewer and concept for each product. We will incorporate so many ideas into the taste that you will not even notice that it is sake. We would like to spread sake throughout the world as a sake that overturns the concept of sake.

As the demand for sake continues to decline, breweries are holding a large amount of inventory, which is having a major impact on their business. We are also working to revitalize the value of sake.

We want to make it cool and fashionable to enjoy sake.

We are planning to develop sake for the target market that usually uses cafes, as well as sake that can be used as a base for cocktails in the bar industry. We are developing low-alcohol, grapefruit juice-like junmai sake and sake concentrates with an alcohol content of over 30 degrees Celsius.

We will not only develop a sake that tastes like grapefruit juice, but we will overturn all stereotypes of sake (how it is made, what it tastes like, how it is distributed, how it is drunk, and what it is like) in a positive way.
