This endeavor is a testament to our commitment to leveraging the abundant regional resources of Forest of Medical Herbs and Trees and Kyoto Kyotango.

About Fresh Craft Gin

The gin we produce is a craft gin that harnesses the richness of the natural surroundings of our distillery. In Japan, we are fortunate to have a diverse array of botanicals, including the precious "juniper berries" –a rare ingredient for gin–thriving in the vicinity.

Situated in this blessed location, we have the privilege of hand-picking plants in the morning, using them in their fresh state for distillation on the same day. This unique process allows us to capture the essence ofthe botanicals at their peak. It is for this reason that we refer to the gin produced at this distillery as "Fresh Craft Gin."

Health and Longevity in Kyoto Kyotango: A Country of Centenarians

Kyoto Kyotango City boasts an astonishing threefold increase in the percentage of individuals aged 100 or above compared to the national average. Furthermore, the elderly population here is renowned for their vitality. The secret to this longevity is believed to lie in their dietary habits. The mountains and forests of Kyoto Kyotango arehome to over 300 varieties of medicinal herbs and trees, and people have long been supported in their pursuit of health and longevity by the blessings of this natural abundance.

While it's often said that "alcohol is the best medicine," the roots of gin, in particular, trace back to medicinal spirits. We anticipate that the "Fresh Craft Gin crafted in the Medicinal Herb and Tree Forest of the Country of Health and Longevity" will become a new testament to the charm of Kyoto Kyotango, sharing its unique allure with the world.

The great nature of Tango Amanohashidate Oeyama National Park

More than 300 species of medicinal herbs and medicinal trees thrive in the rich forest

Kyotango Mairingen Distillery

The "Kyotango Mairingen Distillery" is nestled within the Kyoto Kyotango Forest Park Switzerland Village, part of the Tango-Amanohashidate-Oeyama Quasi-National Park, at an elevation of 683 meters, surrounded by the abundant beauty of nature. Situated in an environment with high altitude and low air pressure, it provides conditions akin to vacuum distillation, offering unique opportunities for distillation.

Within the park, various facilities, inspired by Switzerland and bearing local place names, dot the landscape. One such building bears the name of the central Swiss town "Meiringen." This structure, once aged and in a state of closure, has been revitalized, refurbished, and given new life. Embodying the spirit of renewal and perpetuity found in the natural world, it stands as a testament to the interdependence between "human" and "nature" within the cycle of giving and receiving.

The distillery's name, "Mairingen," reflects these sentiments, expressing a desire to be a source that sustains the interconnectedness of "human" and "nature" as one integral part of the perpetual circle of life.

Artisans at Work

Meet Yongtae, the Project Leader, and Shinzan, the Distiller, the two individuals connected by the keyword "nature." In the art of gin-making, "distillation" involves extracting and combining the distinctive characteristics of each botanical, creating a singular "harmony." We refer to this harmony and the process through which it emerges as "UZU."

In this unique process, we learn from "nature," and we aspire to distill not just botanicals but also the essence of "human." Each harmony, every phase of growth and the interconnectedness we discover inspire the continuous creation of "UZU" from diverse perspectives.

As artisans committed to the art of distillation and the celebration of nature's wisdom, we look forward to sharing the evolving stories of "UZU" with enthusiasts and connoisseurs alike.
