For sake, rice is harvested in the fall and sake brewing begins, and new sake is made available two to three months later in the winter.
The most famous new sake of each year is the French wine "Beaujolais Nouveau," but the new sake of sake can also be called "Nouveau.
The new sake brewed by our company, Eau-de-vie Shonai, is in fact "Eau-de-vie Nouveau.
This year marks the fourth year of the "Eau-de-vie Nouveau" project, and this time we have focused on the rice used as the raw material, and have realized a groundbreaking initiative through collaboration with Noen Teitaro, a cutting-edge rice farmer in the same Shonai region who has been working on cutting-edge rice farming.
The rice cultivation that Noen Sadataro is working on in an advanced manner is characterized by the "visualization" of greenhouse gas reductions in established agricultural products, a groundbreaking agricultural method that is also advocated by the Ministry of Agriculture, Forestry and Fisheries, and is a "challenge to produce rice with reduced CO2 emissions.
The rice farming method of Teitaro Noen is an initiative to produce CO2-reduced rice by using biochar as a field application, which creates CO2-reduced fields and produces CO2-reduced rice according to GHG indices.
Sake Matrix of CO2 Reduction Rice
Biochar is a technology that produces charcoal from unused vegetables and resources, and the patented carbonizing furnace introduced by Sadataro Noen does not emit CO2 during the production process.
