When you think of soba, the first image that comes to mind is "◯◯◯.
When you think of soba, the first image that comes to mind for many people is soba from Shinshu, but in fact, Hokkaido, not Shinshu, is the largest producer (harvest volume) of buckwheat in Japan. Hokkaido has a cool climate and a large temperature difference between summer and winter, making it the ideal natural environment for producing delicious, high-quality soba.

Although it has only been a year and a half since we started our restaurant, we are now serving about 30,000 bowls of buckwheat noodles a year to our customers, with many of them enjoying our products, which have been introduced on YouTube and various media. Freshness is also important for soba, and our "3-tate method" of making freshly ground, freshly beaten, and freshly boiled buckwheat noodles is exceptionally delicious. By freezing the fresh raw buckwheat noodles quickly, we are able to deliver them to our customers without losing the flavor and texture of the buckwheat noodles.

Why is "Shinshu" the most famous place for buckwheat noodles when fresh buckwheat noodles can be harvested? We wondered why many famous buckwheat noodle restaurants in Honshu, which is famous for buckwheat noodles, do not have the image of "Hokkaido = buckwheat noodles" even though they use buckwheat flour produced in Hokkaido. I visited more than 100 soba restaurants and ordered soba from every famous soba restaurant in Shinshu, but I could not find soba that I could truly believe "This is good! I have visited more than a hundred soba restaurants and ordered soba from all the famous restaurants in Shinshu, but I have encountered only a few soba restaurants that I could truly believe in my heart, "This is good soba! Looking back on it now, it was a reckless challenge, but it is because we are in a production area that we are able to produce truly delicious buckwheat noodles! We started making buckwheat noodles as amateurs in order to produce buckwheat noodles that we could truly enjoy from the bottom of our hearts because of their origin. After several years of trial and error and repeated setbacks, we finally arrived at the "fresh and tasty 3-tate soba (freshly ground, freshly beaten, and freshly boiled) because it is produced in Hokkaido.

■ Background to the Makuake project
We want more people to know about authentic and delicious soba noodles from Hokkaido, which is the No. 1 soba production area in Japan. We want to change the image of "Soba" from "Shinshu" to "Hokkaido". With this strong desire, we decided to challenge "Makuake", a service to support and purchase atarashii things and experiences.
We developed a new type of buckwheat noodle called "Yuki Arare Soba," which looks like a mixture of "arare" (snow arare) by kneading several millimeters of rounded buckwheat particles into buckwheat noodles. Since the buckwheat flour is rough and the buckwheat particles are even rougher, the buckwheat noodles are easily broken and delicate, so they are boiled gently and carefully before serving. Soba noodles made with this technique are not sold on any mail order website at this time, and it is a very difficult process to make.
In the Makuake project, you can also purchase a set of Asahikawa's specialty, shinko yaki (roasted newborn eggs), as well as snow-arare Soba noodles. We will deliver within the New Year, so it is also recommended for New Year's Eve.
