The "As if Fish" series is a new series that pursues not only the appearance but also the taste. In preparation for sales, we have formed a business alliance with Fujimitsu Corporation (Location: Higashi-Fukagawa, Nagato City, Yamaguchi Prefecture; President: Masashi Fujita) to jointly develop "Just Like Kani" (Imitation crab meat made of dietary fiber).
Is the expression "tastier than the real thing" correct? Crab-flavored kamaboko" (commonly known as KANIKAMA) is always cited as a typical example of an alternative processed food, but when we asked about the situation in the industry, we were told that the raw material situation for fish surimi, which is the ingredient, was a tightrope walk. The expansion of the global market is a good thing, but on the other hand, it also causes a supply shortage problem. The shortage of raw materials for surimi in response to the increasing global demand for marine products is a major issue facing fish paste product manufacturers today.
Fujimitsu Corporation is a long-established fish paste manufacturer that has been in business for over 130 years. The company has excellent manufacturing technology and many years of experience, but it cannot survive without a stable supply of surimi raw materials. When considering delicious kanikamaboko products for the next 100 years, we decided to try to develop and manufacture "Just Like Kani," in line with Fujimitsu's corporate philosophy of a sustainable society. After receiving encouraging words that motivated us to "challenge" the concept of the "As if Fish" series, which aims to provide sustainable products, Azuma Foods Co. and Fujimitsu Co. decided to work together.

Crab-flavored kamaboko (also known as kani-kamaboko) is now so popular at home that it can be called a national dish!
It was created in Japan about 50 years ago and is now a popular food consumed all over the world. We took on the challenge of creating "Just Like Kani" with the aim of creating the ultimate sustainable food, a product that is earth-friendly and sustainable, without the use of fish meat. We are pleased to offer you a new "Imitation Crab meat" rich in dietary fiber.
The industry's first "Imitation crab meat" made from plants is rich in dietary fiber. The "Just like a fish" series is characterized by the fact that it looks just like the real thing! The "Just Like Fish" series is unique in that it looks just like the real thing! The regular "Imitation crab meat" is made from "fish" instead of "crab" by using "fish surimi". The innovation of the plant-derived "Imitation crab meat" is that it is made without using any animal ingredients, including fish meat, in this form!
Vegetables and legumes are well-known as high-fiber foods, but the main component of this product is dietary fiber from fermentation and cellulose, which provides 8.3 g of dietary fiber from 100 g of the product.
